Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Two containers of chicken and one container of tomatoes from the prep top cooler were discarded by PIC. Discussed ensuring products maintain 41 F or below.

Observed dishmachine chlorine sanitizer not at proper minimum strength. Strength observed to be 0ppm after multiple dishwashing cycles. Dishmachine appears to not be completing the sanitizer cycle, only completing wash and rinse. Dishmachine shall be at proper minimum sanitizer strength. 'Do not use' sign was placed on machine until repair is made.
