Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Small containers of prepped chicken and steak observed to be 45 degrees Fahrenheit in the prep top cooler. PIC placed items in walk-in freezer for temperature to reach 41 degrees F. Discussed ensuring lid is down on coolers when not in use for maintaining temperature, not overfilling items above fill line, and using smaller portions to maintain temperature.
