- Observed raw hamburger patties uncovered and stored over cut green peppers and onions in reach in cooler in main kitchen. Observed uncovered container of raw fish placed on top of box of single service sauces in walk-in-cooler.
- COS, cut onions and peppers were moved to be stored above raw beef patties. Beef patties were moved to bottom shelf of cooler. CA: Do not store raw meats above ready to eat food items. Store food according to cook temp in coolers. Do not store raw animal products over ready to eat items.

Multiple packs of deli meat discarded from walk-in-cooler and prep top cooler by employee. Discussed routinely checking dates with PIC.
