Observed time/temperature control for safety foods cold held at greater than 41 degrees Fahrenheit. Cut lettuce, tomatoes, and spinach observed to be out of temperature in prep top cooler with clear lid. Products were recently placed in prep top cooler and were placed in freezer to cool to 41 degrees F. Higher temperatures observed around outer edges of prep unit lid near where lid does not completely seal; discussed when cold holding TCS products must maintain 41 F or below.

Products were recently placed in prep top cooler and were placed in freezer to cool to 41 degrees F. Higher temperatures observed around outer edges of prep unit lid near where lid does not completely seal; discussed obtaining a lid that completely seals to maintain 41 degrees F or below in cooler. Owner will contact DPH when proper sealing lid is installed.

Observed the Person in Charge could not provide proof during the inspection that a proper disinfectant would be utilized for responding to a vomiting or diarrheal event in the the establishment. Clorox bleach shall be obtained.

Observed time/temperature control for safety foods cold held at greater than 41 degrees Fahrenheit. Roast beef, pepperoni, chicken, cut tomatoes, spinach, and lettuce all observed to be out of temperature in prep top coolers. Products were discarded by PIC. Discussed monitoring unit to ensure products maintain 41 degrees F, and ensuring containers are not overfilled. Vegetable cold hold unit appears to not maintain temperature; owner on site to evaluate unit and will contact repairman if needed.
