2-1B - hands clean and properly washed
Regulation: 511-6-1.03(5)(c) - when to wash (p)
Observed grill cook load burgers on the grill while holding cooked burgers recently removed from the grill in transfer pan, and attempt to return to preparing RTE food without changing gloves and washing hands. Advised PIC that hands must be washed when moving between preparing raw and ready-to-eat foods. PIC instructed cook on proper handwashing times and procedure.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed floor in freezer in disrepair. PIC stated floor had been cleaned with soap and water. Floor was badly buckled and not easily cleanable. Advised PIC that floors must be maintained cleanable.
