Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. PIC had item labeled.

Observed Hydrogen Peroxide chemical used as a sanitizer, but there is no test kit available. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. PIC instructed to use alternative approved sanitizer until instructions and test kit are available for alternative sanitizer product.

Observed multiple TCS food items in the walk-in cooler holding above 41F including leftover products and cases of milk. The ambient temperature of the cooler was 50F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. Some items directly below the compressor were at 40F, but just outside of that area items were holding between 42 and 46F. Request leftover products like boiled eggs, popcorn chicken, tuna salad, and milk to be discarded due to the inconsistency of the walk-in cooler.

Observed walk-in cooler with an ambient temperature of 50F in use for holding TCS foods. Equipment shall be maintained in a state of repair and condition that meets the requirements of 511-6-1. Have cooler repair so that it can hold food properly at 41F or below. Do not use for TCS foods until repaired.
