Observed pan of Italian sausage, diced ham, cheese sauce, and wings prepped yesterday (3/10/2026) located in prep-cooler not date marked for 7 days after lasting more than 24 hours. CA: PIC instructed to date mark items after prep/lasting more than 24 hours. COS:PIC datemarked items.
17C - physical facilities installed, maintained, and clean

Floors, walls, and ceilings observed heavily stained with food debris; floor chipping in back kitchen area.
