6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed chili, hotdogs, and bacon in bottom prep cooler reading at temp greater than 41F. CA PIC instructed to turn down unit since back thermometer is reading 44.8F to allow for cold holding foods to be maintained between 41F or below. COS PIC turned down thermostat to bring unit down.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Sanitizer spray bottles used to clean tables that were not in active use are at concentration of 0ppm. CA PIC was instructed to re-make buckets to bring concentration to correct level and to retrain employees on proper sanitizer making. COS PIC removed bottles.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Walk-in freezer is leaking causing heavy ice build-up to form on food.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Floors in kitchen dirty, floors in chemical storage closet dirty.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.05(2)(n) - exhaust ventilation hood systems, designed to prevent grease or condensation from dripping on food/equipment (c)
