Observed multiple pans of prepped potentially hazardous foods such as diced tomatoes, Italian meat roll, diced chicken, and milk stored throughout both salad prep-cooler and pizza prep-cooler as well as walk-in cooler not datemarked for 7 days after being made on Sunday (2/15/2026). CA:PIC instructed to datemark all items that are prepped that last more than 24 hours with day 1 being prepped plus 6 additional days. COS:PIC datemarked items.

Observed containers of ricotta cheese in both upstairs reach in fridge and downstairs walk-in cooler with a discard date of 2-15-2026. CA: PIC instructed to discard all items after discard date. COS: PIC discarded containers.
