6-1C - proper cooling time and temperature
Regulation: 511-6-1.04(6)(d) - cooling (p)
Observed pan of grilled chicken in 2-Door HH pass-thru @ 112 degrees(F), Upon investigation, found out that chicken had been cooling on counter before getting put in the HH pass-thru in hurry. Grilled chicken was then moved to walk-in cooler uncovered and started cooling process properly. CA:PIC instructed items that are cooling must be cooled uncovered in cold-holding unit. COS:PIC had employee time mark and place item in walk-in.
6-2 - proper date marking and disposition

Observed mixture of salmon cakes in 2-door reach in date marked for discard on 10/18. CA:PIC instructed items can only be held for 7 days. COS:PIC had employee discard item.
