6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed pans of chicken tenders in front serving line hot-holding cabinet and front burger/grill service station hot-holding well. CA:PIC instructed to re-heat items since less than 2 hours and increase monitoring to prevent hot-holding issues. COS:PIC re-heated both pans to greater than 165 degrees (F)
2-2B - proper eating, tasting, drinking, or tobacco use
Regulation: 511-6-1.03(5)(k)1&2 - eating, drinking, or using tobacco (c)
Observed employee tumbler located under prep-line in kitchen. CA:PIC instructed to retrain employees that all drinks must be in a a disposable cup with lid & straw. COS: PIC moved tumbler to office.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed Starbucks hand-washing sink being used as a dump sink and cleaning sink. CA: PIC instructed to use dump sink to discard Starbucks items, and then can use extra equipment until faucet is fixed. COS; PIC stopped using HW sink.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Starbucks dump sink doesn't work to where hot water faucet does not produce hot water, and sink drains slowly. Submit invoice once repair completed.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Wet stacking of plastic bins located between coolers
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
