6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed prepped pimento cheese, sliced tomatoes, diced tomatoes, cut lettuce, and other prepped items with no form of date marking. All TSC items must be properly date marked and used/disposed according to date.
