Observed uncovered sauces and toppings in grill area. All food items must be stored covered to protect against contamination. Cover all food items.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed food splatter/residue buildup on interior of prep top cooler lids. Food contact surfaces must be cleaned and sanitized at a rate to prevent buildup. Clean/sanitize lids.

Observed clean plates and bowls not being stored inverted throughout kitchen area. Store inverted to protect food contact surface.
