Observed ceiling tiles in kitchen still to be cellulose; some over the ware wash area appeared to be molding and floors are deteriorating providing area to breed bacteria. CA: Replace ceiling tile with a mylar sealed ceiling tile that can be easily cleaned and greatly retards microbial growth (Molding) in areas of increased heat and humidity such as a kitchen environment. Seal floors to isolate food being prepared from possible colonies of bacteria in deteriorating floors.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed ventilation hood over fryers and griddle as well as sides of fryer units to have built up food debris and grease on filters and side surfaces. Also shelves immediately above cooking surfaces with built up debris and grease. CA: Clean all nonfood contact surfaces often enough to prevent food particle build up on filters in ventilation hood and sides of equipment.
