Observed fryer sides as well as floors and steps leading to WIC to have built up grease and food debris on them. CA: Clean surfaces thoroughly and frequently enough to maintain clean to the touch surfaces. Kitchen floor throughout kitchen in need of detailed cleaning. Encapsulate tread surface of steps leading into WIC with impermeable and easy to clean material.
