OBSERVED AMBIENT TEMPERATURE OF BOTTOM OF PREP TOP COOLER AT 54 DEGREES F. SLICED CORN BEEF TEMPED AT 67 DEGREES F, DICED HAM AT 54 DEGREES F, AND COOKED PORK AT 54 DEGREES F. ALL COLD HOLDING MUST BE 41 DEGREES F OR BELOW AT ALL TIMES. ITEMS IN TOP OF PREP COOLER WERE WITHIN TEMPERATURE. COOLER MUST NOT BE USED UNTIL IT IS SERVICED AND VERIFIED THAT IT IS ABLE TO HOLD ITEMS AT 41 OR BELOW UNDER OPERATING CONDITIONS. RECOMMEND KEEPING TEMPERATURE LOGS TO VERIFY COOLER TEMP THROUGHOUT THE DAY.
