Observed a buffet style self-service operation with food in open air. Ensure there are sneeze guards to protect food at all times. Move other self-service steam table around so the sneeze guard is facing towards customers. Ensure food is protected at all times. PIC has been informed he states he understands and will fix it as soon as possible. I will be back next week to ensure there is no more consumer self-service operations in effect.
