Observed several items in back reach-in cooler not 41F or below. Beef Barbacoa temping at 64F prepped on 6/5/26, Beef Adobada temping at 45F prepped on 5/21/26, Ambient reach-in cooler temp at 45F.
Person in charge moved Barbacoa in freezer and discarded Adobada due to expiration date.
6-2 - proper date marking and disposition

Observed multiple items in reach-in cooler with no date marking after prepping. Ensure ready to eat TCS food items are date marked. Use 7 day discard time frame. Person-in charge states they understood.
10D - food properly labeled; original container
Regulation: 511-6-1.04(8)(b) - expired foods (p)
Observed Adobada past expiration date in reach-in cooler. Prep date on 5/21/26 and discard date on 5/27/26. Ensure to keep up with date marking and expiration dates.
