Observed multiple items out of temperature. The PTC/RIC by grill has multiple items that are not within temperature: shredded cheese 43F, Sliced tomatoes 43F, lettuce salad 48F, shredded lettuce 42F, cooked steak 46F, Pepperoni 44F, Deli ham 44F, alfredo sauce 45F, tuna salad 45F. Hold TCS foods at 41F or below. Corrected action: PIC states he just had this repaired, but states he will buy new PTC/RIC. Repairman on-site checking PTC/RIC.

Observed multiple items out of temperature in the walk-in cooler. WIC temperatures: sliced tomatoes 42F, pizza meat sauce 43F, raw chicken 42F, marinara sauce 50F. I spoke with PIC regarding holding TCS foods 41F or below and moving items to another fridge while WIC gets repaired.

Observe items in the walk-in cooler not cooled properly within 6 hr time frame. Chicken prepared 3/20 and 3/21 temp @ 45F. When cooling items, food items must be lowered from 135F to 70F within 2 hours and from 70F to 41F within the next 4 hrs. Spoke with PIC regarding parameters for cooling and items discarded if not reached 41F. PIC voices understanding.
