Regulation: 511-6-1.05(6)(l) - mechanical warewashing, hot water sanitization temperatures(p)
Observed dish machine sanitizing at 130F plate level. Ensure high-temperature dish machine is at least at 160F plate level. Informed PIC to discontinue use until dish machine is fixed and I verify it is in proper temperature. Use 3-compartment sink method until dish machine is repaired.
