6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple items out of temperature. Reach-in cooler: Buttermilk at 43F, Corn at 45F, and Ambient at 49F. Prep-top cooler at serving line: coleslaw at 43F, Deviled eggs at 50F. All cold holding items must be 41F or below. Informed CFSM of temperatures and recommended to store items in walk-in cooler. Ensure back reach-in cooler units are maintenanced to properly cold hold items at 41F or below.
