4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed chemical dish machine not producing a sanitized dish. Noticed the Chlorine container empty with no Chlorine. Multiple dishes already passed through. CFSM replaced the chlorine container. After multiple passthroughs the highest concentration got up to 50ppm CL. Informed CFSM to discontinue use of dish machine and switch to 3-compartment sink method. I will be back later to confirm that the dish machine is providing a sanitized dish before they discontinue use of the 3-compartment sink.

Observed food items out of original packaging. Ensure food items are properly labeled when out of original container/ packaging.
12A - contamination prevented during food preparation, storage, display

Observed 6 big cans of various food with dents in can. Ensure to check cans for dents prior to stocking. Ensure to separate and remove all dented cans away from cans that are in good condition. Store dented cans in dented cans area.
