Ensure all hand sinks are stocked with soap and paper towels.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(d),(e) - warewashing equipment, cleaning frequency; warewashing machines, manufacturers' operating instructions (c)
Must have appropriate sanitizer test strips.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Floor in walk-in cooler and dry storage must be resealed. All ceiling tiles in kitchen must be smooth, non-absorbent and easily cleanable.

Lights in kitchen must be properly shielded.
