Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed employee washing utensils without submerging them in sanitizer solution. CA: Utensils must be properly sanitized by complete immersion in an approved chemical sanitizer at the required concentration and contact time. COS: Employee instructed to fully submerge utensils in sanitizer; sanitizer concentration verified during inspection.
