Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Cooling methods being used/observed were not adequate in rapidly cooling Time/Temperature Control for Safety Foods (eggs). Eggs were taken of the hot bar at 8:30 but were not placed on an ice bath until after 9:00. COS: Eggs were discarded by the Person-in-charge.
