Observed raw shell eggs stored next to cooked sausage in the reach-in cooler, creating a risk of cross contamination. CA: Raw animal foods must be stored separately from cooked ready-to-eat foods to prevent cross contamination. Proper separation during storage helps reduce the risk of foodborne illness. COS: Raw eggs were voluntarily discarded at the time of inspection.

PIC was unable to locate test strips that were not already expired to test the chemical concentration of quaternary sanitizer used in the 3-compartment sink.
