Found cooked from 12pm cooked beef at 92° and cooked on site chicken at 89° stored on counter with cardboard cover, per discussion with operator it was determined that the items cooked from raw at approx 12pm to over 175° were placed there to use thru the lunch rush and then would be placed in walk-in cooler to finish cooling, to needed 70° within the next 45 mins, product would not have reached 70° if left on counter covered. Items were placed in metal pans and placed in walk in cooler under fan to rapid chill. Rechecked temp after 15 mins and at 84° with an addition 30 mins for 14° to cool Corrective Action Taken
