High Priority - - From initial inspection : High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed birria (48F - Cold Holding); carnitas (50F - Cold Holding); fajitas (46F - Cold Holding) stored in walk in cooler. Per operator, employees were in and out of walk in cooler while putting away delivery items; foods out of temperature for approximately 3 hours. Operator moved foods to walk in freezer to quick chill. Corrective Action Taken Repeat Violation Admin Complaint - From follow-up inspection 2023-08-28: Observed Fajita meat 47°F cold holding, taco meat 46°F cold holding, cooked white rice 49°F cold holding. Per operator, food not prepped or portioned today; stored in walk in cooler overnight. Stop sale. Operator discarded foods. Admin Complaint
