Observed fresh garlic in oil (73F - Cold Holding); cut cabbage (70F - Cold Holding) at cook line. Per operator, foods not prepped or portioned today; foods out of temperature for approximately one hour. Operator had cook put foods inside walk in cooler to quick chill. Corrective Action Taken
