Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At walk in cooler, raw chicken breast (46F - Cooling)@10:25 since 8:00, 46F @11:00. At the current rate, product will not reach 41F within 4 hours. Advised operator of proper cooling parameters. Operator placed product into freezer to facilitate cooling process. Corrective Action Taken
