High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1. Observed in the Left sandwich table; sliced tomatoes (46-50°F - Cold Holding); shredded lettuce (48-50°F - Cold Holding). Per the manager the items were removed from the table, for approximately 1 hour as the as the table was ice up. Items moved to walk-in freezer to quick chill 2. Observed in the Right side sandwich table; teriyaki chicken (38°F - Cold Holding); turkey (48-50°F - Cold Holding); ham (53-54°F - Cold Holding). Per the manager the items were removed from the table for 1 hour as it was iced up. Items moved to the walk-in freezer to quick chill. 3. Observed in the walk-in cooler, chicken strips (44°F - Cold Holding); teriyaki chicken (46°F - Cold Holding); tuna salad (45°F - Cold Holding); sliced tomatoes (45°F - Cold Holding); turkey (45°F - Cold Holding); ham (44°F - Cold Holding). Per the manager he had been going in and out of the cooler for bread baking for over 1 hour. The manager adjusted the temperature of the walk-in cooler from 42°F to 38°F.
