Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine tested at 0ppm chlorine. Manager adjusted machine and chemicals and retested to 75ppm chlorine. Corrected On-Site

High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Grilled chicken in warmer in kitchen at 125F. Per employee, chicken prepared 20 minutes prior. Operator decided to cool chicken and chicken was moved to the walk-in cooler. Temperature approximately 20 minutes later at 58F. Corrective Action Taken
