Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed 0ppm. Operator said technician is coming to fix. Operator set up Three compartment sink sanitizing station to wash and rinse in dish washer then manually sanitize in sink quaternary ammonia 300ppm. Corrective Action Taken
