High Priority - Observed: Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Turkey (44F - Cold Holding); eggwash (45F - Cold Holding); pasta (46F - Cold Holding) reach in single door cooler at cookline. Operator turned unit setting from 39F to 34F to better hold temp while in rush. Food must cool to 41F within 4 hours. Corrective Action Taken Priority: High Priority

Intermediate - Observed: Handwash sink does not provide water through a mixing valve or combination faucet. No cold water at handsink at dishwash area. Unable to fully wash hands for correct amount of time due to hot temperatures. Priority: Intermediate
