Observed Dessert Mix (48F - Cold Holding); Sour Cream (47F - Cold Holding) in reach-in cooler with an ambient air temperature of 39F. Operator stated the items had been in the reach-in cooler overnight.

Observed sour cream, cut lettuce, shredded cheese, and hot dogs without a date mark on containers of when the product was opened. Educated operator on proper date marking procedures. Operator stated the items were open 3 days ago. Operator date marked items. Corrected On-Site
