High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked plantains 112-128 °F hot holding in frying basket on fryer. Discussed with operator about proper hot holding temperature and reheating temperature/time, operator stated the cooked plantains will reheated to 165 °F within 2 hours. Corrective Action Taken
