High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In service area of kitchen, housemade buttermilk ranch (66F - Cold Holding); sour cream (62F - Cold Holding) for three hours per operator. Operator iced down foods. Corrective Action Taken

Intermediate - Ready-to-eat, time/temperature control for safety food opened/prepared, frozen and then thawed and held at refrigeration temperature not properly date marked. Cooked pulled pork and compound butter stored in freezer previously, currently stored in walk-in cooler, date marking incorrect due to thawed time not date marked, per operator removed from freezer yesterday. Spoke with operator about implementation of date marking system to track both frozen and refrigerated times.
