High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In pan of ice at front counter: ranch dressing cups (51F-56F - Cold Holding). Manager stated the ranch dressing was made with buttermilk. Manager stated the ranch dressing had been held at the front counter on ice for approximately 45 minutes. Inspector had manager move the ranch to the freezer to rapidly cool to 41F. Corrective Action Taken Repeat Violation Admin Complaint

In warming unit at cookline: chicken (118F - Hot Holding); chicken (108F - Hot Holding); waffle fries (112F - Hot Holding). Employee stated all items were held inside unit for approximately one hour, then reheated all three items above 165F during this inspection. Corrected On-Site
