Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishmachine without sanitizer attached to machine. Operator does not have sanitizer to replace the sanitizer in the dishmachine. Operator will use quaternary sanitizing solution in the three compartment sink. Operator ordered more sanitizer for machine.

Observed Brown Rice (130F - Hot Holding) in hot holding unit on cook line at 5:00 PM. Operator stated that the rice has been in the holder since 1:00 PM. Operator stated a new batch of rice is being made to replace the rice. Operator instructed employee to discard rice. Corrective Action Taken
