Intermediate - Raw or undercooked oysters offered and establishment has no consumer advisory sign provided on wall, menu, placard, table tent or by any other written means. Raw animal foods must be fully cooked prior to service. Observed no signage for consuming raw oysters. I supplied establishment with signage and operator posted it. Corrected On-Site

Basic - Carbon dioxide/helium tanks not adequately secured. Observed 3 Co2 tanks not secured next to the syrup boxes.

Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed salmon and grouper thawing in ROP in walk in cooler, still frozen and not removed from packaging. Operator removed items from packaging for proper thawing. Corrected On-Site

Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed hood filters with a grease build up over the fryers. Repeat Violation
