High Priority - Raw animal foods not properly separated from each other during preparation based upon minimum required cooking temperature. Observed raw chicken and raw pork thawing together in the sink in the preparation kitchen. During the inspection employee removed items.

High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed shredded beef (78F - Hot Holding); chickpeas soup (87F - Hot Holding), in steam table. As per employee food was placed in steam table 2 hours before the inspection. During the inspection, the employee reheated the items to proper temperatures: shredded beef to 169°F and chickpea soup to 171°F. Corrective Action Taken
