Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed raw tuna thawed completely inside of reduced oxygen packaging in prep area.

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw salmon (60F - Cold Holding); krab sticks (61F - Cold Holding) inside sushi cooler, as per operator for 10 mins. Operator turned on cooler and placed products inside separate reach in cooler for rapid cooling. Corrective Action Taken
