Observed make table with chicken raw (50F - Cold Holding); raw beef (50F - Cold Holding); pork raw (50F - Cold Holding), per operator items were put in truck at 8:30 before travel. Operator added ice to containers to cool items and put in freezer to rapidly cool. Observed items cooled to 40°F, 42°F and 40°F respectively in approximately 30 minutes. Corrected On-Site
