Observed employees prepare burgers on line wipe hand on apron and proceed to put gloves on. Coached operator on proper procedures.

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at reach in cooler below grill station raw beef sirloin (52F - Cold Holding); raw fajita beef (56F - Cold Holding) as per operator was placed 45 minutes before temperature was taken. Operator placed in walk in cooler for rapid cooling. Corrective Action Taken
