Owner stated that the cake was cooked by a relative at their home.operator segregated the cake. 5 cans of red peppers dented at the seem, operator segregated the items. In reach in cooler at end of cook line cut lettuce (53F - Cold Holding); cut lettuce (50F - Cold Holding); cut tomatoes (46F - Cold Holding); cut tomatoes (46F - Cold Holding); mozzarella (53F - Cold Holding); cut lettuce (46F- cold holding. Manager stated that all food had been in cooler overnight, no temperature checks had been conducted, manager could not tell how long food had been out of temp.
