Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection....ambient cooling cut tomatoes 45° with covered and stacked one another and cooling diced cut chicken 55° with covered and stacked pans one another in walk in cooler . Took another temperature after 20 minutes it was same temperature as above . Manager uncovered food separated the container. Corrective Action Taken
