In walk in cooler sliced tomatoes (54F - Cooling) at 2:35 since 2:00 to 53F at 3:00; at this current rate of cooling product will not reach 40F within 4 hours; advised operator to remove plastic wrap from container to allow airflow for product to cool faster.
