High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. stewed chicken (132F - Hot Holding); rice enchiladas (117F - Hot Holding) Observed at steam table. Per operator, products out of temperature for approximately 30 minutes. Operator states, that time control is used for steam table food products. Advised operator to time stamp products for remaining 3.5 hours. Time control procedure emailed to operator. Repeat Violation Admin Complaint
