Operator stated the mix was put in the machine 30 minutes prior. Operator turned on switch to the machine. Temperature was at 52F once checked again at 10:10 AM. Operator is going to discontinue use of the machine and put in for service. As a repeat violation the importance of following proper protocol with this violation was reinforced with the operator.
