Observed shredded mozzarella (60F - Cold Holding); shredded cheddar (62F - Cold Holding); fresh mozzarella (55F - Cold Holding); cooked onions (56F - Cold Holding); cooked chicken (55F - Cold Holding); ham (50F - Cold Holding); sliced tomatoes (58F - Cold Holding); meat balls (60F - Cold Holding); ambient air eggs (60F - Cold Holding); sausage (50F - Cold Holding) in flip-top cooler top cooler for less than four hours per person in charge.
